Recipe(tried): Best Pickled Beets from Fresh

Preserving - Pickles, Relishes
I got this recipe from a friend and it is soooo easy. My family loved it. (I found I didn't grow enough beets!)

PICKLED BEETS

1 1/2 cups cider vinegar
1 1/2 cups beet water
2 cups sugar

Cut root and top off beets and scrub well! (No dirt hiding anywhere.) Put clean beets in pressure cooker. Add 1 pint water. Bring to 15 pound pressure, pressure about 5 minutes, then cool down. As soon as weight can be taken off-remove beets and put in cool water. Slip skins. (Reserve the beet water!).

Make beet syrup by mixing the beet water, vinegar and sugar in pan until sugar dissolves. Put 1/2 tsp plain salt in clean hot pint jars. Put whole, sliced or cubed beets in jar. Pour syrup over beets, use knife to remove bubbles.

Put on lids and rings, process in bath 20 minutes or pressure 5 lbs for 5 minutes.
