Recipe: Strawberry and Pasta Salad with Peanut Dressing (using angel hair pasta)
Salads - Potato, PastaTHAI'D AND TRUE STRAWBERRY AND PASTA TOSS
FOR THE SALAD:
2 cups fresh strawberries, hulled and halved
1 cup shredded Chinese (Napa) cabbage
1 cup bean sprouts, cooked 2 minutes, well drained
1 cup shredded spinach leaves
1 bunch red radishes, trimmed and shredded
8 ounces capellini or angel hair pasta, cooked according to package directions
1/4 cup chopped fresh cilantro
FOR THE PEANUT DRESSING:
2 tablespoons peanut oil
2 tablespoons chicken broth
2 tablespoons creamy-style peanut butter
1 teaspoon soy sauce
1 teaspoon honey
1 clove garlic, pressed
1 teaspoon finely minced fresh lemon grass
1/2 teaspoon grated fresh ginger
1 tablespoon lime juice
1/4 teaspoon crushed red pepper
1/2 cup mashed hulled fresh strawberries
GARNISHES:
Chopped roasted peanuts and scallion brushes
Combine the ingredients for the salad in a large bowl.
In a saucepan, combine all the ingredients for the dressing except the mashed strawberries and garnishes. Simmer the dressing, stirring, until thickened and smooth.
Stir the mashed strawberries into the dressing and toss with the salad. Serve immediately with the garnishes.
