Recipe: Tamale Casserole with Cornbread Topping (Jimmy Dean Sausage recipe)

FOR THE MEAT MIXTURE:
1/2 cup chopped onion
1 clove garlic, minced
1 tbsp oil
1 lb pork sausage
1 (8 oz) can tomato sauce
1 (12 oz) can whole kernel corn, drained
1/3 cup ripe olives, sliced
1/2 tsp salt
FOR THE CORN BREAD TOPPING:
1/2 cup sifted flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup yellow corn meal
1 egg, beaten
1/2 cup milk
2 tablespoons shortening, melted
Cook onions and garlic in hot fat until tender but not brown.
Add sausage, crumble, and brown. Drain off drippings.
Add tomato sauce, corn, olives and salt. Mix well. Place meat mixture in a two quart casserole.
To make the cornbread Topping:
Sift together the flour, sugar, baking powder, and salt. Stir in corn meal; set aside.
Combine egg, milk, and melted shortening and add to dry ingredients. Beat until smooth. Pour topping mixture over meat mixture in casserole.
Bake at 400 degrees F for 35 minutes or until top is brown.
Makes 6 servings
