Recipe: Artichoke Balls (food processor)

ARTICHOKE BALLS

1 (8 ounces) jar marinated artichoke hearts and liquid
3/4 cup fresh mushrooms, sliced
2 garlic cloves
2 cups grated Parmesan cheese
1 1/2 cups dry bread crumbs
2 eggs
1 teaspoon Jane's Crazy Mixed Up Salt (or 1/2 teaspoon each of salt and pepper)

Preheat oven to 375 degrees F.

Using a food processor, finely chop artichoke hearts (with the liquid), mushrooms and garlic.

Transfer artichoke mixture to a mixing bowl. Add cheese, 1 cup bread crumbs, eggs, salt and pepper. Mix well.

Form into small balls, using a rounded teaspoon and roll in remaining bread crumbs.

Bake on greased cookie sheet for 20 minutes. Serves hot.

Authors notes: "This was one of my first recipes as a young bride. They have always been a hit at our parties. Be sure you make enough, because they disappear fast."
