Recipe(tried): Thursday night light Dinner... Frito Salad

Tonight we will be having a light dinner due to my husband working late and my all day cleaning of the house, on top of keeping up with our two "busy' children. They are enjoying the warm weather...both love the outdoors. Tonight I will have Frito Salad and iced tea. I adjust the recipe to feed my family. The following is the recipe for 6-8 people.

Frito Salad

1 lg. head lettuce, chopped
1 lb. ranch style beans
1 lb. cheddar cheese, grated
1/2 onion, chopped
2 tomatoes, chopped
1 (12 oz.) bag Fritos
3/4 bottle Catalina dressing

Toss all ingredients except Fritos and dressing. Crumble Fritos, add to salad, add dressing, and toss. Some people like to brown a lb. of ground beef or chuck, drain and add to the salad.
