YOGURT CAKE (GREEK COFFEE CAKE)
4 1/2 cups sifted flour
3 teaspoons baking powder
1 teaspoon baking soda
2 1/2 cups sugar, divided use
2 eggs
1 cup butter, softened
2 cups plain, unsweetened yogurt
Grated rind of 1 lemon
1/2 cup slivered or ground almonds
1 teaspoon ground cinnamon
1/2 cup sugar
4 tablespoons butter, melted
Preheat oven to 350 degrees F. Grease and flour a (11x16-inch) baking pan.
Sift together into a large mixing bowl flour, baking powder and baking soda. Mix in 2 cups sugar, and then eggs, softened butter, yogurt and lemon rind. Mix well, and put batter into prepared baking pan.
Mix together and sprinkle over the batter: almonds, cinnamon and the remaining 1/2 cup sugar. Sprinkle melted butter over top.
Bake at 350 degrees F about 45 minutes.
