Recipe: Tri-Hi Meat Loaf (Anchor Hocking, 1976)

TRI-HI MEAT LOAF

1 cup cracker crumbs, divided use
1 1/2 lbs. ground beef
1 (6 oz.) can tomato paste
2 eggs, beaten
1 cup finely chopped onion
1/3 cup finely chopped green bell pepper
3/4 tsp. salt
1/8 tsp. ground black pepper
1 1/2 cups small curd cottage cheese
1 (4 oz.) can mushroom pieces
1 tsp. dried parsley

Combine 1/2 cup cracker crumbs with beef, tomato paste, eggs, onion, green pepper, salt and pepper. Pat half of the mixture into the bottom of 8-inch square baking dish.

Combine remaining 1/2 cup cracker crumbs with cottage cheese, mushrooms and parsley. Spread over meat mixture in dish. Top with remaining meat mixture.

Bake in a preheated 350 degree F oven 1 hour. Let stand 10 minutes.

Makes 6 servings
