ISO: beet sugar pie

I have two large raw sugar beets and was told that I could use them for a sugar beet pie..so far can not find a recipe can anyone help me..i was told this while traveling through nebraska where they were haresting them..these are large freh sugar beets..i was told this by a truck driver..
