Recipe: Vegetables in Sour Cream (using sour cream and chives potato mix, 1970's)

1 (10 oz.) pkg. frozen mixed vegetables
1 (4.8 oz) box Betty Crocker Sour Cream and Chives Potato Mix
2 1/4 cups water
2/3 cup milk
2 tbsp. butter
1 (2 oz.) jar pimiento, sliced and drained
1/2 tsp. salt
Rinse frozen vegetables under cold running water to separate; drain.
Heat all ingredients to boiling in a 10-inch skillet, stirring frequently. Reduce heat; cover and simmer, stirring occasionally, until potatoes are tender, 30-35 minutes.
Makes 6 servings
