ISO: Coconut Shrimp from Crazy Buffet asian fusion restaurant

I am looking for the recipe that the Crazy Buffet restaurants use to make their Coconut Shrimp dish. Very tasty and everyone's favorite! The shrimp, although fried/tempura?, were not served dry/on their own, but were served in a creamy coconut sauce. Served hot. Unfortunately the Crazy Buffet, asian fusion restaurant, in our area has recently changed their menu and is not serving this dish.

During a recent visit, I requested the recipe from the restaurant manager and the manager "contacted the corporate chef" and said "he was unable to provide exact instructions over the telephone, only the ingredients"...

Ingredients (???)
Shrimp (fried/tempura)
Mayonnaise
Sugar
Condensed Milk
Coconut Milk
Pineapple Chunks
Garnish with Scallions and Red Peppers

I hope that someone has knowledge of this recipe. Any ideas? Thanks in advance.
