ISO: Cookout question

I'm going to a cookout this weekend and I want to bring my father-in-law's favorite food, the copy-cat recipe for Outback Steakhouse's coconut shrimp. I want to prepare them at home because they are deep-fried and messy to clean up from, but I'm afraid they will get soggy during the drive to the cookout. Does anyone know a secret to keep them nice and crispy during transport?
