ISO: General Banquet quanities

Misc.
I am looking for general information determining quanities to cook for protein, veg., starch, etc. per person in a banquet setting. Example: 250 people = 125lb. chicken breast, 60lb green bean, etc. Any help would be appreciated.
Thank you,
