ISO: Italian Main Dishes

I'm a non-traditional student (3 kids, 2 grandkids) with limited means to cook. I'm sick to death of "quick" meals. I love Italian. What can I do with a hot plate, a microwave, and a toaster oven? I'm too overwhelmed with studying to be a creative cook on my own. Help!!
