ISO: Luby's Spinach Souffle

My husband worked for Luby's years ago and has talked about their Spinach Souffle. Does anyone actually know of this dish and hopefully have some idea about how to make it. His description did NOT fit my idea of a souffle. The recipe does not appear in their cookbook. Any help would be appreciated.
