ISO: Milk substitution

Dear Darlene,

You will get a different taste and texture if you substitute buttermilk for milk or cream. It will have a tangier taste -- might actually be good. The nice thing about au gratin potatoes is that it is not an exact science, and experimenting with different cheeses and liquids can often result in a wonderful dish!
