ISO: Need a couple of recipes from Fredericksburg, Texas

Last week I visited Fredericksburg, Texas and had a wonderful Fruited Chicken Salad with Pineaple, pecans and grapes, at Engel's Deli.

I also had a Greek Salad in Fredericksburg at a restaurant called Rathskeller. I would like the recipes for both these dishes, if somebody has them or can obtain them. Thanks!
