Recipe: Roquefort Cheese Ring (GE Refrigerator Booklet, 1951)

ROQUEFORT CHEESE RING

1 (0.25-ounce) envelope unflavored gelatin
1/4 cup cold water
1/4 cup hot water
2 packages (3-ounces each) cream cheese, at room temperature
1/3 cup crumbled Roquefort cheese
1 cup mayonnaise or salad dressing
1 tablespoon grated onion
1/4 cup minced parsley
3/4 teaspoon salt (or to taste)
TO SERVE:
Salad greens (for garnish)
Fresh fruit (for garnish)
Crackers (optional)

Sprinkle gelatin over cold water; let soften for 5 minutes.

Add hot water; stir until gelatin dissolves. Let cool.

In a medium bowl, beat cream cheese, Roquefort and mayonnaise together until well blended. Stir in onion, parsley and salt, then add gelatin mixture. Mix well.

Rinse an 8-inch ring mold with cold water. Pour in the cheese mixture. Refrigerate until firm.

TO SERVE:
Dip the mold into hot water, being careful not to get any water in the mold. Unmold on a plate lined with salad greens. Fill the center of the ring with fresh fruit. Serve with crackers.
