ISO: Pickled Green Tomatoes

Having recently moved to SW Arkansas, my husband has taken a liking to pickled green tomatoes that are served in all the local restaurants. I would like to make him some pickled green tomatos, but all the recipes I have seen call for bell pepper, onions some have celery, etc. I want plain pickled green tomatoes or do they all have onion in them?
