ISO: Plz tell me about plaintains!

I know nothing about plaintains.

Long time ago, I had a friend that made this awesome plaintain dish, really simple, she boiled it and when it was done, she put it on a plate with little bit of extra virgin olive oil and salt and IT WAS THE BEST!!

But I'm not sure what color of the plaintain was, whether it was green or whatever.

I would really like to know more about when to buy plaintains, or when they are ripe or how to cook them, blah blah and ..sum recipies would be awesome too!! :D

P.S. I'm not really into any deep fried plaintains.

I'd really appreciate any of your help!! :)
