STRAWBERRY FROZEN YOGURT
2 tsp unflavored gelatin
3 tbsp milk
1 cup plain yogurt
2 tbsp sugar
1/8 tsp salt
1/8 cup sieved frozen strawberries*
1 1/2 tbsp lemon juice
1/2 cup heavy (whipping cream), whipped
In a custard cup, soak gelatin in milk. Set cup in boiling water; stir until gelatin is completely dissolved.
Combine yogurt, sugar, and salt. Stir in gelatin mixture. Stir in berries and lemon juice. Chill until slightly thickened.
Beat the thickened gelatin mixture until foamy. Fold in whipped cream.
Pour mixture in metal ice-cube tray. Cover with foil; freeze.
*"I have also made this with approx 1/2 of 1 pint of fresh strawberries, well crushed. I then froze it in a Donvier ice cream maker. Delicious!"
