ISO: question for linda lou (thickening gravy with clear gel?)

Linda Lou,
I have read it is unsafe to thicken with flour or cornstarch is it possible to thicken with clear gel. I know substituting this for freezing sauces and gravies doesn't allow them to break down . Just wanted to know if you had any insight on the clear gel.
