ISO: SANCOCHO (Chicken, etc.)

I am looking for a recipe for SANCOCHO. It is primarily a stew from the Dominican Republic. My mother was raised in the Panama Canal Zone when it was being built and had a maid who fixed Sancocho for her. I would like to surprise Mom with this stew since she has lost all will to have an appetite or to live.
