ISO: spanish rice for 100

Ok, I am planning a party for about 100. Will be serving a taco bar. My question is rice. Can Spanish Rice be premade? If not can anyone offer any suggestions regarding a taco bar side dish that can be reheated? perhaps something involving potatoes.

Or, is just lots of tacos and chips filling enough?
