enjoyed the Chicken Enchiladas. (It makes me happy :-)!) I have the same problem that you have in that both of my girls are vegetarians but not vegans. (DH and I are neither vegans or vegetarians.) Now that both are away from home, I don't have to deal with the different diet situation as often as I used to. (DH and I often eat vegeatrian meals when they are home - probably very good for us:-)!!) Sometime, you might like to try the Cheese Enchilada recipe that I posted if your daughter isn't a vegan. One of my daughters likes these but not the other one since she isn't terribly fond of cheese. The recipe for the Cheese Enchiladas also came from my dear friend, Emma, who gave me the Spanish Rice recipe. DH and I like these as well. I think that it would be too labor intensive to try to make both kinds of enchiladas for the same meal but, who knows...your DS and DH might like them too. They are quite a bit different from the chicken version. Thank you so much for the feedback!
