Recipe: Gemini Restaurant Banana Nut Bread (using whole wheat flour and orange peel)

BANANA NUT BREAD

1/2 cup margarine
1 cup turbinado sugar (available at groceries and specialty stores)
2 eggs
3 ripe bananas, mashed
1/4 cup whole milk
2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon grated orange peel
1/2 cup chopped walnuts

Cream together the margarine, sugar and eggs. Add mashed bananas and milk and blend.

Add all remaining ingredients and mix until combined; do not overmix.

Preheat oven to 350 degrees. Grease a 3-by-5-by-9-inch loaf pan and pour in batter. Bake for 50 to 60 minutes (check at 50 minutes with a toothpick).

Remove pan from oven and allow to cool on rack. When cool, remove bread from pan and slice.

Yield: one loaf, serves 6 to 8
