Hello Everyone - I am searching for the recipe for Rice Pancakes made with regular white rice and includes raisins.
My Dad made this for me when I was a little girl. I'm not sure if it is something from German heritage or something he made as a cook in WWII, or perhaps he just concocted it on the fly.

RICE PANCAKES

2 eggs, separated
1 cup milk
2 tbsp. butter, melted
1/2 cup flour (3/4 of it may be whole wheat flour)
1 1/2 tsp. baking powder
1 tsp. sugar (optional)
1 tsp. salt
1 cup leftover cooked rice

Beat egg yolks, then add milk and butter and beat well.

Sift dry ingredients together and add to egg mixture. Add rice.

Beat egg whites stiff and fold into mixture.

Drop by spoonfuls onto hot greased griddle. Brown and turn quickly when full of air.


RICE PANCAKES (using 1/2 cup rice)

3/4 cup flour
1 1/2 tsp. baking powder
1/2 tsp. sugar (optional)
1/4 tsp. salt
1 egg, separated
1 cup milk
2 tbsp. melted butter
1/2 tsp. vanilla
1/2 cup cooked rice

Sift together flour, baking powder, sugar and salt; set aside.

Beat egg yolk until light. Add milk, butter and vanilla. Mix well.

Stir in dry ingredients and beat until smooth with a rotary beater.

Blend in rice.

Beat egg white until stiff but not dry. Fold into rice mixture.

Bake on hot griddle, using about 1 tablespoon batter for each cake.

Makes about 3 dozen

I realize your question is about 20 years old, but here's a Rice and Raisin Pancake recipe I tried for the first time this morning (and it's delicious!) It's an old magazine clipping from the 1980s or early 90s (Women's Day, Better Homes & Gardens, Good Housekeeping, one of those housewife magazines).

RICE AND RAISIN PANCAKES

2 eggs
1 cup milk
1 cup cooked rice
1/2 cup raisins
1 tablespoon oil or melted butter or margarine.

Combine the above ingredients together well, then add:

1 cup flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt

Spoon 1/4 cup batter onto griddle and cook as usual.

Serve with maple syrup or whatever topping you like (sour cream with cinnamon-sugar is good). These are somewhat dense and chewy, real comfort food.
