ALMOND PASTE

8 oz. ground almonds
4 oz. sugar
4 oz. confectioners sugar
3 drops almond extract
3 drops lemon juice
1 egg

Sieve nuts and sugars. Add flavoring and lemon juice to
egg. Stir in dry ingredients; knead until smooth. Refriger-
ate. Use in pastries calling for almond paste.
