Barbarba - A quick chicken idea for you

Hi Barbara,

How about cutting up the chicken into pieces and putting in a large roasting pan with baby carrots and potatoes cut in chunks (you can preboil the carrots until crisp-tender to give them a start). Toss with Italian dressing and roast, uncovered, in the oven at 350 degrees F about an hour or until the chicken is done. You can split it into two pans if you don't have a large one (if it's too crowded it will steam instead of brown). Line the pan with foil first for easy cleanup.
