Recipe: Ritz Cake (meringue base using Ritz cracker crumbs and whipped cream topping)

RITZ CAKE

3 egg whites
1 cup granulated sugar
1 cup chopped walnuts
1 teaspoon vanilla extract
20 crushed Ritz crackers
FOR THE TOPPING:
1 pint whipped whipping cream or 8 oz Cool Whip, thawed
2 tp 4 Tablespoons Nestle's Quick powder
Chocolate shavings (for garnish)

Preheat oven to 350 degrees F.

Stiffly beat egg whites. Fold in sugar, nuts, vanilla and cracker crumbs. Spread evenly into a 9 inch greased pie pan.

Bake 30 minutes at 350 degrees F. Allow to cool then place in fridge for 1 hour to chill.

Top with Whipped cream or Cool Whip. Chill additional 3-5 hours before serving.

Sprinkle top with chocolate shavings and serve.
