Do you make pesto? There are so many recipes I hesitate to give one. If you make extra and want to freeze until later, Marcella Hazan recommends leaving the grated cheese out. I do that - and then I drop it on foil or double wax paper in about 1/4 cup portions - and freeze on a tray -- then when hard - I wrap up and put in ziploc bags ..... a touch of summer all year!

We love slicing tomatoes, topping with slices of fresh mozzarella, and then a chiffonade of basil (or chopped or even whole leaves if they're small). Season with salt and pepper - and drizzle with some good olive oil. Let stand for about 15 minutes -- and it's a complete lunch. It is also great on sandwiches -- good Italian bread. You can add onion slices to the above.

I also put a LOT in my pasta sauces -- especially when making light ones with some fresh tomatoes, etc.

I think it's our very favorite herb! Sorry I don't have exact recipes!
