Recipe: Angel Hair Pasta with Plum Tomatoes & Fresh Basil

Hi, Elly,

Just tuned in to TKL and saw your request so here is my favorite that I make very often. I love fresh basil - why oh why don't I live next door to you!

ANGEL HAIR PASTA WITH PLUM TOMATOES AND FRESH BASIL
(Serves 4)

(This recipe is from Weight Watchers; the author is the Duchess of York, aka
"Fergie")

6 oz angel hair pasta (I use the fresh pasta found in the refrigerator cases at the grocery store)
1 Tbs extra virgin olive oil
1 clove garlic, minced
6 plum tomatoes, peeled, seeded & chopped (I don't bother to peel mine)
1/2 cup minced fresh basil (I've been known to use more)
1/2 tsp salt
Freshly ground pepper to taste
2 tsp balsamic vinegar (this may sound weird, but try it, it add a wonderful flavor)
1-1/2 ounces Parmesan cheese, preferably shaved

Cook the pasta according to package directions; drain, set aside and keep warm.

In a large nonstick skillet, heat the oil. Add the garlic and saute until fragrant, about 30 seconds. Add the tomatoes and cook, stirring as needed, until softened, about 5 minutes. Stir in the basil, salt, and pepper; cook until the tomatoes are very soft, about 5 minutes. Pour over the pasta; toss with the vinegar. Serve, topped with the Parmesan.

NOTES: You can add chicken to this recipe with wonderful results. I use 3/4 to 1 lb boneless skinless chicken breasts; cut into strips, and sauteed for 4 to 5 minutes.

Since this is a Weight Watchers recipe, it's also a healthy dinner.
