Canning Turkey Soup

O.K. , I've been reading a bunch of canning books and the forum here and I have a question, actually a couple. First, I made the most fabulous turkey for Thanksgiving but we've got so much of it left. I intend to make little individual turkey pies but I also wanted to make some soup to can. I have an issue of Cook's Illustrated magazine that has what looks to be a delicious recipe for turkey stock made with white wine and then three recipes for soup made with the stock. Being that I am decidedly a foodie, I don't like just any recipe but I also don't want to kill anyone with my food. As an example one recipe has lemongrass, jasmine rice, garlic, cilantro, basil, scallions, jalapenos and ginger. Would that be safe to can or must I freeze it all?

Can I use those jars that Classico spaghetti sauce comes in, I've had a couple of them break in the freezer but they say Atlas Mason on the side.

Any advice would be appreciated. Thanks.
