Hi John,
Have you consider canning over freezing?
Here is a list of what I would can when I was canning:
PICKLES - pickle the carrots the same as one would for "Pickled Beets" ,
"Mustard Pickles", "End of the Garden Pickles" or "Sweet Mixed Pickles"

Not interested in that idea? Ok, How about turning them into bake-goods?
Carrot cake/loaves, or Carrot cookies.

Want to eat them up now? Grate or shredd them, then add to any of the
following: Hash browns, cole slaws, stir-frys, meat loaves, Tacos, salads,
or tossed with a little bit oil and/or vinegar as a quick snack.
Sliced or diced, add to: soup/stews. Puree them add your fave seasoning,
(onion powder/flakes, celery powder/flakes/seeds Etc.) and heat for a quick carrot soup.

Last of all: count your blessings. Remember it's no sin to give them to
the needy. The homeless are hungry year round, not just at Thanksgiving
and Christmas. Amen.
