Thanks for the dip recipe, we were just using sour cream on green onions, was close but just not 100%, I will give this one a try but I am not sure the Caesar dressing is it either (based on recent visit to BP's...) I'm thinking there might be some cream cheese in there?
As far as the potatoes go I made a SPICY OIL, using a LOT crushed chilies and cayenne pepper and standard canola oil, mix together and simmer at about 230-240 degrees F (100-110C) for a couple of hours, this makes a spicy oil that seems to be close, next I am going to try marinating the potatoes to see if that gets them a little spicier...
BTW I cook my potatoes at 250-260 degrees F (120-130C) until crispy, but the real trick is to throw the potatoes in before the oil gets hot, this allows the center to cook before the outside burns, makes for a crispier outside.
