HONEY-OATMEAL MUFFINS
2/3 cup milk
1/3 cup vegetable oil
1 egg, beaten
1/4 cup honey
1 1/2 cups Quaker Oats (Quick or Old Fashioned, uncooked)
1 cup all-purpose flour
1/2 cup raisins
1/2 cup chopped nuts
1/3 cup firmly packed brown sugar
1 tablespoon baking powder
3/4 teaspoon salt
Add milk, oil, egg and honey to combined remaining ingredients, mixing just until dry ingredients are moistened. Fill 12 greased or paper-lined medium-sized muffin cups 2/3 full.
Bake in preheated hot oven (400 degrees F) 15 to 18 minutes or until golden brown.
Makes 1 dozen muffins
