Creamed Onions

Hi, Nancy:

This is one of my family's favorites:

2 lbs. small white onions
2 tsp. salt
Boiling water
3 T. butter or margarine
3 T. flour
2 bouillon cubes (I use chicken)
1 1/2 c. milk
Cubed American cheese, about a cup
1/4 c. chopped green pepper, optional
2 T. chopped pimiento, optional

Peel onions. Add salt and onions to boiling water. Cook slowly, uncovered until tender, about 20 minutes. Meanwhile, melt butter in skillet. Blend in flour and bouillon cubes. Add milk. Cook over medium heat, stirring constantly, until mixture is smooth and thickened. Add cheese and stir until melted. Add well drained onions to sauce. Garnish with chopped green pepper and pimiento, if desired. Makes 6 servings.
