Creative Cooking for Renal Diabetic Diet

My mother is also a Renal Diabetic and I have only found 1 thing to help us with adding variety to her diet. The Creative Cooking For Renal Diabetic Diets Cookbook by The Cleveland Clinic Foundation is the only one I've found. If you happen to find something else, please let me know! It must be horrible to have such a limited amount of food choices, so I want to do anything I possibly can to make my mother's life the best it can be. I hope this information helps you.
