Dear June: The only dish that I had to look at the recipe is

the Banana Soffl . The Salmon Mousse is a glorified loaf; you can prepare it with canned salmon or if you have fresh salmon left overs you can use them too; the pork Loin is delicious but without great complications-if you have enogh time you can prepare it in the crock pot; the sprouts delicious & completely easy; the Spanish rice is everyday fare for us (I prepare enough & I freeze it in portions for later occasions); the souffl is delicious & I must confess that I am trying to learn how to prepare several recipes (desserts) that involve our tropical fruits & that are elegant & not too sweet nor too complicated.

The standard procedure for my frequent guests (family & close friends) is to seat them at the kitchen counter, & we will share conversation while I cook. After that, they help me to serve in the back terrace, al fresco & also to wash the dishes after we eat. If they are too formal guests, then, I usually have either Seilita & Jos Luis or Lydia to give a hand in cooking & serving. But I do not favor formal visits anymore, I rather prefer to share all the process with my beloved friends & family.

Begin with the Mousse, dearest June, & then bake the pork, with the sauce prepared while cooking the other dishes. Do some Uncle Bens rice or heat some leftover freezed rice. You will see how you can manage a basic Menu.
