Double Chocolate Chip Cookies

I found this on a diabetic recipe site. Hope this helps.

Double Chocolate Chip Cookies

1/2 cup firmly packed brown sugar
1/4 cup margarine, softened
1/2 tsp vanilla
1 egg white
1 cup all-purpose flour
3 TBSP unsweetened cocoa
1/2 tsp baking soda
1/8 tsp salt
1/2 cup semi-sweet chocolate chips

Heat oven to 375 deg. In a large bowl, beat brown sugar, and margarine until light and fluffy. Add vanilla and egg white; blend well. Add flour, cocoa, baking soda, and salt; mix well. Stir in chocolate chips. Drop by teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake at 375 deg. for 8-9 min. or until set. DO NOT OVERBAKE. Cool 1 min; remove from cookie sheets. Makes 2 doz. cookies.
