Recipe: Chipolte's Chipolte Corn Mix

CHIPOTLE* CORN MIX

2 fresh ears sweet corn
2 to 3 roasted Anaheim Peppers
1 can chicken stock
2 to 3 pats butter

Cut kernels of corn off ear.

Over a grill or flame roast the peppers until charred black. Place in a zip-lock baggie to sweat. Take the peppers and strip off the blackened outer skin and chop.

In a sauce pan mix the corn, peppers, butter and chicken stock and reduce until stock is half and corn is tender. Use as garnish for chicken.

*Chipotle chiles, are actually dried, smoked jalape os. They can be bought packed in adobo, a sauce made from ground chiles, herbs, tomatoes, and vinegar.
