Recipe: Bread Pudding with Raisins (serves 2)

BREAD PUDDING WITH RAISINS

2 slices day old bread, cubed
1/2 cup raisins
2 cup skim milk
1/3 cup egg substitute
2 tbsp sugar
1 tsp cinnamon
1 tsp vanilla extract
1/4 tsp nutmeg

Combine the bread cubes and raisins in a 1 1/2-quart baking dish. Combine the remaining ingredients and pour over the bread and raisins. Stir to combine.

Set the dish in a shallow pan. Pour hot water in the pan to a depth of 1-inch. Bake at 350 degrees for 45 to 55 minutes or until a knife inserted in the pudding comes out clean.

Makes 2 servings
