seasonings! I love Roz's idea of seasoning burgers with ranch dressing! I buy chuck steaks when the price is good. Cut them into approximately 1 pound portions to freeze, then grind my own as needed for burgers. I defrost the chunk in a bowl of cold water which seems to leave them in perfect shape unlike trying to defrost in the microwave, which is too fast and all the juices run out. (Or, if I've managed to plan ahead, I defrost overnight in the fridge.) What Roz said about the ice water struck home, since when I put mine through the grinder they are still very cold, sometimes even with a few ice crystals in the center. To my thinking there's no pre-bought ground beef that compares to freshly ground at home for a great burger. I've never done much with seasoning them, but we love ranch dressing and I can't wait to try this idea!
