Recipe: MIncemeat Fudge Squares

MINCEMEAT FUDGE SQUARES

1/2 cup butter or margarine, melted
1 cup sugar
2 eggs
1 cup mincemeat with brandy and rum
2/3 cup chopped pecans
1 1/2 squares (1 oz each) unsweetened chocolate , melted
1 tsp vanilla extract
3/4 cup all-purpose flour
1/4 tsp salt
powdered sugar (for top)

Preheat oven to 350 degrees F. Grease and lightly flour a 12x8x2-inch baking pan.

Combine butter and sugar, mixing well. Add eggs, 1 at a time, beating well after each addition; set aside.

Combine mincemeat, pecans, chocolate, and vanilla; add to sugar mixture, and mix well. Blend in flour and salt. Spoon batter into prepared baking pan. Sprinkle top with powdered sugar.

Bake at 350 degrees F for 35 minutes. Cool. Cut into squares.

Makes about 28 squares
