If you search Amazon for books on restaurant business, there is one that I specifically remember that is very good, but I gave it long ago to a friend. It is called How to Begin a Small Restaurant (or something like that). Some of the chapters discussed Menu making, interview & selection of personnel, how to maintain a balanced budget, etc...Good luck again.
