CHUNKY PECAN MUFFINS
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
Generous pinch of allspice
1 3/4 cups coarsely chopped toasted pecans
1/2 cup firmly packed dark brown sugar
1/2 cup butter, melted
1/3 cup milk
1/4 cup maple syrup
1 egg
1 teaspoon vanilla
Preheat oven to 400 degrees F. Generously grease 2 1/2-inch muffin cups or use baking cups.
Mix flour, baking powder, salt, and allspice in large bowl. Stir in toasted pecans. Scoop out a well in center of dry ingredients.
Whisk brown sugar, melted butter, milk, maple syrup, egg, and vanilla in medium bowl. Pour liquid ingredients into well, stir until just blended. Batter will be lumpy. Fill prepared muffin cups 3/4 full.
Bake until muffins are golden brown and tester inserted in center comes out clean. Turn out, and serve warm.
