Hi Diane

Misc.

You might still get a reply to your posting on the Ethnic board, but to cook a good curry you need to have an appreciation of the basic techniques, knowledge of spices and their preparation plus an understanding of flavour combinations. The best bet is to get yourself an "introduction to Indian (Thai) cooking" type of book- Madhur Jaffrey has produced an excellent one, but there are others around - and start from scratch. I know that I tried several recipes which didn't come out as expected until I went back to basics, and then I began to get good results. It takes a little time but it's not difficult, mainly to learn about another cuisine all the sorts of things that you "instinctively" know about North American cuisine because you've lived with it all your life. And after a little work you will produce fragrant, spicy meals which are an absolute delight.
