CHOCOLATE CHAUD
(French-Style Hot Chocolate)

"This French-style hot chocolate is similar to ones served in French bistros. Though no sugar is added during cooking, it is often served with sugar on the side. Some cafes also add a splash of warmed milk."

1/2 cup water
2 ounces bittersweet chocolate, chopped
1 teaspoon sugar (or to taste)
Warmed milk (optional)

Pour water into a medium saucepan and place over medium heat. As soon as the water warms, add the chocolate and begin whisking until the chocolate is smooth and completely melted. Pour into a mug and serve immediately with sugar and warmed milk to taste, if desired, on the side.

Makes 1 serving
