After you first brown your chicken or meat, remove it to a plate or bowl and then stir fry vegetables separately, then put the meat back into the pan with the sauce and just cook until done. The main problem that I have found, is that if you cook the meat and then the vegetables together the meat gets over cooked. With pork it doesn't make too much difference but with beef and chicken, it does. Hope this makes sense.
