Tender chicken

If you're referring to sliced chicken, then let me share with you my secret. It's in the marinade. I usually use about 2 tsp soy sauce, 1/2 tsp sugar, a dash of sesame oil and a tsp of chinese wine. At times, I add a little bit of oyster sauce as well. Another reason for tender chicken will be in the slicing. Slice your chicken breast or fillet against the grain so as to shorten the muscle fibres. Marinate the chicken slices for a couple of hours before cooking.
