You may scoff at this suggestion, but please be sure to do any recipe requiring brining in the correct sign or phase of the moon. Get your self an almanac to keep check for this. The signs go back to the head on Aug. 28, I beleive as aI, to had planned to do Kraut. Don't ever try to make it when the signs are below the chest- it will spoil and rot instead of fermening.
